For the Love of Garlic and Mango Festival at The River Cafe Puerto Vallarta

The River Café is sponsoring their annual For the Love of Garlic and Mango Summer Festival now until July 31. This is a special menu of dishes highlighting garlic and mango, a truly wonderful combination of flavors.

Starting the dinner was a garlic confit with mango chutney and red bell pepper for spreading on crisp crostini. The clove is scooped out of the roasted bulb and spread like soft mild butter.

The Caesar salad is a take on the traditional with plentiful minced garlic mixed with anchovy in the dressing, tossed with torn Romaine lettuce leaves and interspersed with large chunks of prosciutto bacon. On top was freshly grated Reggiano cheese, accompanied by grissini, an Italian dipping breadstick. The rich, very creamy soup featured double garlic thickened with potato and garnished with chipotle aioli. The portion was large, tasty and filling.

A top quality filet mignon was grilled as desired, served with bacon, garlic slices, baked potato and vegetables. Underneath was a rich dark peppercorn sauce. Creamy penne pasta was prepared with roasted garlic, peas and pancetta. Al dente and richly flavored, it was a delightful creation.

Fresh, ripe mango was brandy-glazed and served over vanilla ice cream, a delightful way to celebrate the local season of this fine fruit. Soft cheese and mango were formed into a pie, resembling a smooth cheesecake, with fruit purée garnishing the plate.
